"Sweetly ripe and seductively complex, this is richly spicy on the nose showing dried cherry, bay leaf, cumin, clove and toasted nut aromas with an earthy mushroom nuance. The palate is soothing and expansive, delivering velvety texture together with seamlessly woven tannins. A gorgeous savoury rendition offering fabulous drinking."

Winemaking
Winemaker: Dean Shaw
Fermentation: Cold soak for one week followed by a fermentation over one week with one hand plunge per day, followed by post fermentation maceration for another 10 days.
Barrel: 10 months in French Oak, 20% new French Oak

Food pairings
Lamb, chargrilled steak, wild venison. A cassoulet or duck with olive would suit this vintage. Make a coq au vin and use Pinot Noir in the sauce. Glazed ham. Roast turkey. Pair it with a truffle brie or a light blue cheese.
