This club is seriously a good time! You're in charge - we'll add our cellar door collection to your shipment and you can trust us or you can change it up as you wish.  This club order will include all of our current varietals and vintages as well as some library selections and pre releases.

Delicate blush Pinot Noir with lifted wildflower and exotic fruit aromatics. A spice-layered, rich mid-palate is balanced by bright acidity and a fresh, persistent finish.

Appearance
A delicate blush hue with a glistening clarity that instantly signals elegance.

Nose
Lifted aromas of wildflower, redcurrant, and exotic stone fruit, layered with subtle spice and a hint of floral perfume.

Palate
Textured and richly expressive. A spice-layered mid-palate provides depth, while vibrant acidity and a fine mineral thread deliver freshness and drive. The fruit profile leans towards red berries and tropical notes, creating intrigue and balance.

Finish
Fresh, persistent, and poised - the kind of finish that makes you instantly want another sip.

Style & Pairing
100% Pinot Noir, carefully selected and hand-picked bunches were lightly pressed using a gently methode champenois press style. Free run of this press cycle is used so as to avoid colour pick up and heighten aromatics. Indigenous yeast fermentation ran for 3 months in stainless steel sitting between 13 and 20 degrees celsius. The fermentation was stopped with 2.5g/L of residual sugar for lovely balance. No fining and vegan friendly.

A versatile wine that shines on its own but pairs beautifully with seafood, charcuterie, or long lunches in the sunshine with friends.

Bright, zesty and bursting with lychee, lemon and white blossom, this Sauvignon Blanc is classic Gibbston: crisp, lively and full of energy. The palate is dry, refreshing and beautifully textural, driven by our mature single-vineyard vines and cool-climate tension. Vibrant, elegant and seriously drinkable.

Growing Season
The 2024 growing season in Gibbston delivered a beautifully long, cool ripening period - ideal for Sauvignon Blanc. Spring was settled, with good flowering and balanced crop set across our mature vines. A mild summer with cool nights preserved natural acidity, while long, dry autumn days allowed flavours to develop slowly and cleanly.

Fruit was hand-picked on 1 May 2024, achieving 22.8 Brix with excellent physiological ripeness. The result is a vibrant, highly aromatic Sauvignon Blanc that reflects the precision, tension and purity that Gibbston is known for. A standout expression from our 20+ year-old single-vineyard vines.

Winemaking
This 100% Gibbston single vineyard Sauvignon Blanc was cool-fermented in 100% stainless steel for 21–23 days, with no malolactic conversion to preserve purity and drive.

To Pair With
Great with fresh seafood - crudo, ceviche, oysters; zesty chicken dishes, thai dishes, seasonal veg risotto.

From our ‘mystery vines’, this single vineyard Pinot Noir is bright and energetic, bursting with red fruit and wild herb aromatics. It’s vibrant, textural, and unmistakenly Gibbston. 

Meet your 2024 Summer Pinot Noir!

Made in a Beaujolais-inspired style with stainless steel fermentation and a little time in oak, this Pinot Noir is light on its feet, yet full of personality!

Think wild red cherry, raspberry, and cranberry, intertwined with hints of wild herb, forest floor and subtle spice.

It’s an energetic Pinot Noir that we’re currently enjoying chilled during these warmer days. The flavour bursts out of the glass and we love it with a little bit of beetroot-cured salmon and a dollop of dill cream…. oh yeah, afternoon made!

This is the last year that we will be producing this single clone beauty.
